Ingredients:
Chicken:
- 2 large free range chicken breasts
- 1 Tbsp Goldcrest Chilli Infused Honey
- 1 Tbsp lime juice
- 1 Tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper, to taste
Salad dressing:
- 2 Tbsp olive oil
- 2 Tbsp lime juice
- 1 Tbsp Goldcrest Chilli Infused Honey
- Salt and pepper, to taste
Salad:
- 1 large head butter lettuce, washed
- 1 Mediterranean cucumber, sliced
- 2 stalk celery, sliced
- 6 spring onions, sliced
- 1 large ripe mango, sliced
*Substitute with Goldcrest Mango Slices when out of season (drain well)
- Salt and pepper, to taste
Method:
- Preheat a braai on medium.
- Slice chicken breasts in half horizontally to create 4 chicken cutlets.
- Place the chicken in a medium sized bowl.
- Drizzle with the Goldcrest Chilli Infused Honey and all the marinade ingredients.
- Toss to coat well.
- If you have the time – cover and place in the fridge, allowing to marinate for 30 minutes.
- Braai the chicken pieces until lightly charred and cooked through but still nice and juicy.
- When cooked, remove and set aside on a chopping board to rest and cool slightly.
- For the salad dressing, combine the Goldcrest Chilli Infused Honey and the remaining ingredients in a small bowl and whisk to emulsify.
- Assemble salad on a large serving platter:
- Combine butter lettuce, cucumber, celery, spring onions and mango.
- Slice rested chicken and dot all over the salad.
- Drizzle everything with a little dressing just before serving and enjoy!
