Ingredients:

Chicken:

  • 2 large free range chicken breasts 
  • 1 Tbsp Goldcrest Chilli Infused Honey 
  • 1 Tbsp lime juice
  • 1 Tbsp olive oil 
  • 1 tsp smoked paprika
  • Salt and pepper, to taste 

Salad dressing:

  • 2 Tbsp olive oil
  • 2 Tbsp lime juice
  • 1 Tbsp Goldcrest Chilli Infused Honey 
  • Salt and pepper, to taste 

Salad:

  • 1 large head butter lettuce, washed
  • 1 Mediterranean cucumber, sliced
  • 2 stalk celery, sliced
  • 6 spring onions, sliced
  • 1 large ripe mango, sliced 

*Substitute with Goldcrest Mango Slices when out of season (drain well)

  • Salt and pepper, to taste 

Method:

  1. Preheat a braai on medium. 
  2. Slice chicken breasts in half horizontally to create 4 chicken cutlets. 
  3. Place the chicken in a medium sized bowl.
  4. Drizzle with the Goldcrest Chilli Infused Honey and all the marinade ingredients. 
  5. Toss to coat well.
  6. If you have the time – cover and place in the fridge, allowing to marinate for 30 minutes. 
  7. Braai the chicken pieces until lightly charred and cooked through but still nice and juicy. 
  8. When cooked, remove and set aside on a chopping board to rest and cool slightly. 
  9. For the salad dressing, combine the Goldcrest Chilli Infused Honey and the remaining ingredients in a small bowl and whisk to emulsify. 
  10. Assemble salad on a large serving platter:
  11. Combine butter lettuce, cucumber, celery, spring onions and mango. 
  12. Slice rested chicken and dot all over the salad. 
  13. Drizzle everything with a little dressing just before serving and enjoy!
