Serves 6 (as a starter)
Ingredients
- 6 tins Goldcrest Smoked Oysters
- 1 pack creamed spinach, 200g
- 100g bacon bits
- 100g Mozzarella cheese
- 50g Parmesan cheese
- 2 tsp Lemon juice
- 1 tsp White wine vinegar
- ½ Salt
- ¼ Black pepper
- 1 tsp Smoked paprika
- ½ cup Panko Breadcrumbs
- Chopped parsley for garnish
Method
- Open the Goldcrest Smoked Oyster tins and drain the oil, keeping the oysters in the tin
- Fry the bacon bits until crispy and mix into the creamed spinach
- Mix together the panko crumbs, salt and pepper and paprika
- To assemble, place spoonfuls of spinach and bacon mixture over the Goldcrest Smoked Oysters in the tin
- Then sprinkle over the panko crumbs and the 2 different cheeses
- Place into the air fryer for 5 – 10 minutes or until golden.
- Garnish with chopped parsley
