  • 250ml / 1 cup water
  • 125ml / ½ cup Goldcrest Pure Honey
  • Zest of 1 lemon, peeled into thick strips 
  • ± 5 sprigs fresh thyme
  • 250ml / 1 cup freshly squeezed lemon juice
  • Ice
  • Freshly sliced lemon rounds
  • 1 litre sparkling water or soda water 
  • 50ml vodka per person / per drink (optional)
  • Thyme sprigs, for garnish 


  1. Combine water, Goldcrest honey, lemon zest and fresh thyme in a small saucepan. 
  2. Bring to a boil. Reduce to a simmer and cook for 5 minutes. 
  3. Strain honey syrup into a small jug and allow to cool completely. 
  4. Freshly squeeze the lemon juice. 
  5. Combine the cooled syrup and the lemon juice in a large jug. 
  6. Fill the jug with ice and sliced lemon rounds. 
  7. Top the jug with sparkling water and stir. 
  8. To serve, pour 50ml vodka into a glass. 
  9. Top with icy lemonade and finish with a sprig of thyme. 
  10. Drizzle an extra dash of Goldcrest honey over each cocktail before serving.
