Grilled Nectarine Salad
Serves 4
Prep time: 5 minutes Cook time: 15 minutes
Ingredients:
- For the dressing:
- ¼ cup olive oil
- 2 Tbsp apple cider vinegar
- 1 Tbsp lemon juice
- 1 Tbsp dijon mustard
- 1 Tbsp Goldcrest Honey
- Pinch of sea salt flakes
- 4 nectarines, sliced in half
- ½ pecan nuts
- 2 Tbsp GOLDCREST honey
- Pinch sea salt flakes
- 1 tsp butter
- Olive oil
- 1 head romaine lettuce
- 1 small bunch rocket, washed
- 100g feta cheese
Method:
- Whisk all salad dressing ingredients together until smooth. Set aside.
- Brush the nectarines with a little olive oil and grill on a hot griddle pan until charred and slightly tender.
- Place pecan nuts in a dry pan over medium high heat. Toast for a few minutes and then add 2 tablespoons of honey and a pinch of salt and cook until the nuts and glazed and the honey has taken on a golden brown colour. Remove from the heat and add a tsp butter to keep the nuts from clumping together.
- Assemble the salad with the lettuce, rocket, pecan nuts, nectarines and feta.
- Drizzle with honey and serve.
