Grilled Nectarine Salad

Serves 4

Prep time: 5 minutes Cook time: 15 minutes 


  1. For the dressing:
  2. ¼ cup olive oil
  3. 2 Tbsp apple cider vinegar 
  4. 1 Tbsp lemon juice
  5. 1 Tbsp dijon mustard
  6. 1 Tbsp Goldcrest Honey
  7. Pinch of sea salt flakes
  8. 4 nectarines, sliced in half
  9. ½ pecan nuts
  10. 2 Tbsp GOLDCREST honey
  11. Pinch sea salt flakes
  12. 1 tsp butter 
  13. Olive oil
  14. 1 head romaine lettuce
  15. 1 small bunch rocket, washed
  16. 100g feta cheese 


  • Whisk all salad dressing ingredients together until smooth. Set aside. 
  • Brush the nectarines with a little olive oil and grill on a hot griddle pan until charred and slightly tender.
  • Place pecan nuts in a dry pan over medium high heat. Toast for a few minutes and then add 2 tablespoons of honey and a pinch of salt and cook until the nuts and glazed and the honey has taken on a golden brown colour. Remove from the heat and add a tsp butter to keep the nuts from clumping together.
  • Assemble the salad with the lettuce, rocket, pecan nuts, nectarines and feta.
  • Drizzle with honey and serve.
