Potato Wedges & Pesto Mayo 

Prep time: 10 minutes

Cook time: 30 minutes 

Serves 4

Ingredients: 

  • 4 large potatoes
  • 2-3 Tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper, to taste 
  • ½ cup mayonnaise
  • 2 Tbsp Goldcrest Tomato, Chilli & Garlic Pesto 

Method: 

  1. Preheat oven to 200˚C. 
  2. Wash and scrub potatoes clean. Dry well. Cut potatoes into wedges. 
  3. Add wedges to a large roasting dish. 
  4. Drizzle with olive oil and season well with salt and pepper. 
  5. Toss to thoroughly coat the wedges in the oil and seasoning.
  6. Spread out in a single layer. 
  7. Bake for 30 minutes until golden, crisp and cooked through. 
  8. Whisk mayonnaise and Goldcrest Pesto together until smooth and well mixed. 
  9. Serve wedges alongside pesto mayo for dipping. 

Pesto Eggy Toast 

Prep time: 2 minutes 

Cook time: 5 minutes 

Serves 1

Ingredients: 

  • 1 slice sourdough bread
  • 1 Tbsp Goldcrest Tomato, Chilli & Garlic Pesto
  • 1 XL free-range egg 
  • 1-2 tsp butter 
  • Roasted cherry tomatoes, to serve
  • Fresh herbs or rocket, to serve 

Method:

  1. Melt butter in a non-stick frying pan. 
  2. When the butter starts sizzling crack in the egg. Cook to your liking and season with salt. 
  3. Toast sourdough and spread with Goldcrest Pesto. 
  4. Top with the fried egg and sprinkle with herbs. 
  5. Serve with roasted tomatoes. 

Pesto Chicken Kebabs

Prep time: 2 minutes 

Cook time: 10 minutes 

Makes 4 kebabs 

Ingredients: 

  • 600g chicken thighs, deboned & skinless
  • Pinch sea salt 
  • 3 Tbsp Goldcrest Tomato, Chilli & Garlic Pesto
  • Lime wedges, to serve 
  • Green salad, to serve 

Method:

  1. Place chicken thighs, a pinch of salt and Goldcrest Pesto in a bowl. 
  2. Toss to coat the chicken. 
  3. Place chicken pieces onto skewers. 
  4. Grill on medium-high heat until golden brown all over and cooked through. 
  5. Squeeze over fresh lime juice and serve with a salad.
