  • 260g / 1 cup yoghurt of choice 
  • Full cream, fat free, lactose free, vegan / coconut yoghurt
  • 2 tsp Goldcrest Honey
  • 120g / 1 cup muesli of choice 
  • ±200g / 1 ⅓ cups mixed seasonal berries (or fruit of choice)
  • e.g raspberries, blueberries & strawberries 
  • 2 tsp Goldcrest Honey 
  • ½ tsp vanilla paste, powder or extract 
  • 1 tsp lemon juice 
  • 2 mint sprigs, for garnish


  1. Combine the yoghurt and Goldcrest Honey in a bowl and mix well and set aside in the fridge.
  2. Slice berries / chosen fruit into bite size pieces that will layer well in the parfait. 
  3. Combine the berries with the Goldcrest Honey, vanilla and fresh lemon juice. 
  4. Mix to stir well. 
  5. Allow the berries to macerate in the fridge for 10-15 minutes. 
  6. They will release their own natural juices and create a flavourful sauce with the honey, vanilla and lemon juice. 
  7. To make the parfaits: spoon some honeyed yoghurt into the bottom of 2 glass tumblers or jars. About ¼ cup / 65g per layer. 
  8. Top with some muesli (about ¼ cup / 30g per layer) and follow with the macerated berries (about ⅓ cup / 50g per layer). 
  9. Repeat the same layers again finishing with the berries. 
  10. Drizzle the tops with a little extra Goldcrest Honey. 
  11. Garnish with a fresh mint sprig. 

If making in advance, keep refrigerated until serving.
