Ingredients:
- 260g / 1 cup yoghurt of choice
- Full cream, fat free, lactose free, vegan / coconut yoghurt
- 2 tsp Goldcrest Honey
- 120g / 1 cup muesli of choice
- ±200g / 1 ⅓ cups mixed seasonal berries (or fruit of choice)
- e.g raspberries, blueberries & strawberries
- 2 tsp Goldcrest Honey
- ½ tsp vanilla paste, powder or extract
- 1 tsp lemon juice
- 2 mint sprigs, for garnish
Method:
- Combine the yoghurt and Goldcrest Honey in a bowl and mix well and set aside in the fridge.
- Slice berries / chosen fruit into bite size pieces that will layer well in the parfait.
- Combine the berries with the Goldcrest Honey, vanilla and fresh lemon juice.
- Mix to stir well.
- Allow the berries to macerate in the fridge for 10-15 minutes.
- They will release their own natural juices and create a flavourful sauce with the honey, vanilla and lemon juice.
- To make the parfaits: spoon some honeyed yoghurt into the bottom of 2 glass tumblers or jars. About ¼ cup / 65g per layer.
- Top with some muesli (about ¼ cup / 30g per layer) and follow with the macerated berries (about ⅓ cup / 50g per layer).
- Repeat the same layers again finishing with the berries.
- Drizzle the tops with a little extra Goldcrest Honey.
- Garnish with a fresh mint sprig.
If making in advance, keep refrigerated until serving.
