Serves 4 (as a starter)
Ingredients:
- ½ cup Amasi
- 1 tsp your favourite hot sauce
- 1 tin of Goldcrest Smoked Oysters
- 1 cup flour
- ¼ cup corn flour
- 1 tsp Cajun spice
For the remoulade:
- 1/3 cup Mayo
- ½ tsp Dijon Mustard
- 1 tsp of your favourite hot sauce
- ½ Red onion, finely diced
- 1 tbsp Parsley, finely chopped
Oil for frying
For Garnish:
- Lemon wedges
- Parsley, chopped
Method
- Place the Goldcrest Smoked Oysters, amasi, hot sauce in bowl and stir to combine – leave overnight to marinade
- Heat your oil in a pot.
- Prepare the dredge mix by adding the flours and the Cajun spice together. Place in a shallow plate or tray.
- Shake off the excess marinade from each oyster and drop into the flour, coating properly
- Fry the Oysters in the hot oil until golden
- Place on paper towel to drain off excess oil
- Serve in a bowl garnished with chopped parsley and lemon wedges
