Serves 4 (as a starter) 

 

Ingredients: 

  • ½ cup Amasi 
  • 1 tsp your favourite hot sauce 
  • 1 tin of Goldcrest Smoked Oysters  
  • 1 cup flour 
  • ¼ cup corn flour 
  • 1 tsp Cajun spice 

 

For the remoulade: 

  • 1/3 cup Mayo 
  • ½ tsp Dijon Mustard 
  • 1 tsp of your favourite hot sauce  
  • ½ Red onion, finely diced 
  • 1 tbsp Parsley, finely chopped 

 

Oil for frying 

 

For Garnish: 

  • Lemon wedges 
  • Parsley, chopped 

 

 

Method 

  1. Place the Goldcrest Smoked Oysters, amasi, hot sauce in bowl and stir to combine – leave overnight to marinade 
  1. Heat your oil in a pot. 
  1. Prepare the dredge mix by adding the flours and the Cajun spice together. Place in a shallow plate or tray. 
  1. Shake off the excess marinade from each oyster and drop into the flour, coating properly 
  1. Fry the Oysters in the hot oil until golden  
  1. Place on paper towel to drain off excess oil 
  1. Serve in a bowl garnished with chopped parsley and lemon wedges
