Roast Pork with baby apple sauce

Ingredients:

  • 1.5 kg pork
  • 2 Tbsp Melted butter
  • 2 Tbsp brown sugar
  • 4 small onions halved
  • Fresh garlic cloves
  • 1/2 tin GOLDCREST┬ábaby apples
  • 1/4 cup cream
  • 1/2 cup pear juice

Sauce:

  • 1 tin GOLDCREST baby apples (strained)
  • 2 tbsp butter
  • 1/2 tsp cinnamon
  • 2 tsp brown sugar
  • 1/2 cup water

Method:

Score the pork with a sharp knife and pour the melted butter over the top.
Add sugar and seasoning and give it a good rub.
Add the onions, garlic and baby apples to the roasting dish.
Pour the cream and pear juice over the top and cover the dish with foil.
Roast for 3-4 hours then remove the foil and roast for at least another 30 minutes.

For the sauce, combine all the ingredients in a saucepan over low-medium heat.
Allow the mixture to simmer (about 20 minutes) until the apples have softened.
Place the sauce in a blender or use as is.

Serve the pork with apple sauce and fresh rosemary.
